Fat Rabbit Provisions & Cohost: A Perfect Pairing

“The idea is simple: serve veg-heavy, healthy, beautiful food that leaves you feeling satisfied but not lethargic, all made with love and intention,” Carey Burres says of her catering concept, Fat Rabbit Provisions. Carey and husband Andrew Thompson, officially launched Fat Rabbit in 2019 after 3 years of flying under the radar. In 2021 they were awarded Best Caterer by D Magazine. We sat down for a Q&A with Chef/Owner, Carey Burres to chat about all things Fat Rabbit- food & future.


Q: What inspired the name ‘Fat Rabbit Provisions'? A: My amazing grandmother, who was my biggest cheerleader. She had this epic collection of rabbit figurines and collectibles. She passed away before I actually started my business, so I wanted to make sure that I incorporated “rabbit” into our name as a way of having her still be a part of it all.  "Fat Rabbit" stuck because rabbits are the healthy eaters of the animal kingdom, and I love the idea of getting happily stuffed on wholesome, veg-heavy food.



Q: What dish can you not live without?

A: Fresh hand-cut pasta (I love fettuccine!) with the best butter and parmesan I can get my hands on. You just toss all that with a little bit of your pasta water and some chopped parsley and you’ve got just about the best bite of food I can imagine. Second to that would be a summer tomato sandwich with nothing but Duke’s Mayo*, good white bread and s+p. I honestly tend to eat really simply when I feed myself and I gravitate more and more to the simpler things on menus as well.


Q: What’s your favorite dish to make for someone else? A: I love making soups and stews because they're so forgiving and allow me to play around with flavors. I also went through a phase where I was trying to roast a chicken every way imaginable, so I also really love making roast chicken dinner when I cook at home or for friends because that super simple meal can be such a showstopper when you do it right. Yeah, I love roast chicken with a lemon sauce and a panzanella salad and a good bottle of vinho verde. Nothing more satisfying to make than that for me!




Q: What’s the coolest event you’ve ever catered?

A: We’ve really been spoiled and have had the pleasure of doing a lot of cool things for some of the players and for the Cowboys organization, we’ve had so many lovely private dinners that have been really special to both Andrew and I because of the intimate nature of them and the weddings can always still somehow give me happy goosebumps.

Back in the beginning when I was just barely even a concept, I did a charity event that Mark Cuban attended. He came back for another serving and I got to take the nerdiest picture ever with him. I’m such an insane fan of him and the Mavs and I just thought "If this is all my career brings, I can retire happy."


Q: What are you most looking forward to in the next year with Fat Rabbit?

A: I’m excited about finding our groove and enjoying the peace that comes with turning a new corner. We've got a beautiful new building and a fresh relationship with Co-Host, bringing some much-needed change and hope. Andrew and I have been working like crazy to make things work and find our place for what seems like an eternity. Sometimes it’s really hard to focus on your actual business because you are so incredibly busy running a business. We're looking forward to focusing on making the food we love and letting the other things take a back seat. This all feels like a breath of fresh air, and we're ready to fling open the doors to all the good stuff.
